If you’re looking to create a dish that combines earthy, umami-rich flavours with a touch of foraged goodness, this recipe is perfect for you. Featuring Jelly Ear mushrooms soaked in soy sauce and paired with fluffy rice and tender Hogweed, it’s a simple yet elegant dish that showcases the best of natural ingredients.

Ingredients:

Method:

1. Prepare the Mushrooms

The night before, place the Jelly Ear mushrooms in a bowl and cover them with soy sauce. Let them soak overnight. The mushrooms will absorb the soy sauce, becoming beautifully flavoured and tender.

2. Cook the Rice

Wash the rice thoroughly under cold water until the water runs clear. This removes excess starch, ensuring your rice is light and fluffy. Add the washed rice to a pan with 300g of boiling water, 1 tsp of salt, and 20ml of mirin.
Bring the mixture to a boil, then cover with a lid and place in a preheated oven at 170°C (340°F) for 20 minutes. Once the rice has absorbed all the water, remove it from the oven. Dice half of the soy-soaked mushrooms and mix them into the rice. Cover the pot with the lid again and let the rice steam on the side for a few minutes.

3. Cook the Remaining Mushrooms and Hogweed

Heat a separate pan over medium heat. Add the remaining Jelly Ear mushrooms and fresh Hogweed to the pan. Cook gently until the Hogweed wilts down and the mushrooms are heated through, releasing their rich, savoury aroma.

4. Assemble the Dish

Spoon the rice into serving bowls, creating a bed for your wilted Hogweed and mushrooms. Pile the Hogweed mixture on top of the rice for a visually appealing presentation and an added layer of flavour.

Say hello to a wild twist on traditional kimchi—Hogweed kimchi! This recipe takes young Hogweed shoots and turns them into a tangy, spicy, and deeply flavourful ferment. It’s all about blending bold Korean flavours with the earthy charm of foraged ingredients. Perfect for adventurous eaters and fermentation fans, this kimchi is a little wild, a little spicy, and totally delicious.


Ingredients:

  • 300g Hogweed (This is the bit you can replace for wild ingredients – Wild Garlic, Dandelions, Sea Radish or a complete mix of things)
  • 3 garlic cloves, crushed or 3 tbsp wild garlic puree
  • 2.5cm/1in piece ginger, grated
  • 2 tbsp fish sauce (optional)
  • 2 tbsp sriracha chilli sauce or chilli paste 
  • 1 tbsp golden caster sugar
  • 3 tbsp rice vinegar
  • 8 radishes, coarsely grated
  • 2 carrots, cut into matchsticks or coarsely grated

Method:

  1. Slice the Hogweed into one inch pieces and put in a bowl.
  2. Add the salt and leaves and really get your hands in there and mix it through thoroughly, don’t be scared to bruise the leaves.
  3. After one hour wash off the salt and pat dry with a towel.
  4. Grate the ginger, slice the chilli and add to the dry Hogweed with the garlic paste, Sriracha and rice wine vinegar.
  5. Finely slice the onion and grate the carrot, add to the mix and stir well.
  6. Place in a sterilised jar which will make it last for months

I like to leave this now to ferment some more in my fridge for a month or so. As it ferments it increases in good bacteria which helps my gut health, gut health is so important, your gut is like the boiler room of your body helping all the vitamins and minerals get to around the body to the right part, basically helping you function.

This recipe works so well on just a bit of toast in the morning or my favourite is with a nice pan-fried white fish on top of the kimchi.

How to harvest and process wild roses

The country side of the UK is abundant wild roses, 13 native and 9 introduced  according to BSBI, many of them hybridising and with very similar appearance. Two of the most common are:

They have been used for centuries for their beauty, wonderful flavours and array of fantastic medicinal properties.

The great thing about wild roses is they are all edible and can be used for recipes interchangeably, so as long as you are 100% certain you have a wild rose species- first part of the botanical name beginning with “Rosa” it doesn’t matter which one edibility wise. You can even use garden varieties. The harvesting, prep and recipes you can make with them are all the same.


Harvest Time and Techniques

Flowers- from late spring to early summer so about May- June. The petals are the only part needed so if you carefully pull just the petals the rest of the flower will remain to go on to produce a rose hip. They will keep well for a few days in a cool place for long term storage they also dry well.

Rose hips- Autumn, the season is quite long for rose hips, they can be seen even in late summer and last on the shrubs well into January,  but simply once the hips turn red they are ripe and ready to use. The traditional time to collect rose hips is just after the first frost as the freezing breaks the cells within making them softer and sweeter. This is called bletting, but we now have the modern technology of freezers so can start earlier if we wish. 

When collecting your rose hips it will be useful to take a pair of gloves to protect from the thorns also some secateurs as it’s only when they are really soft do they come away from the stem easily.

Edible parts and uses

 Leaves

When very young in spring they can be added to salads and stir fries. Different species have varying levels of spines and thorns, so have a little check first but generally they are very smooth at this age, like pictured above. Dog rose Rosa Canina is my favourite for this. 


Rose petals 

Floral and perfumed with a light sweetness

Decoration

Can be used for their beauty and light sweetness for decoration on desserts and in salads or any food that they will compliment. Rose petals are well known for flavouring Turkish delight.

Infusion

Rose petals work excellent as an infusion into many different vinegars, syrups or alcohols and jellies so have an experiment! The flavours are water soluble so take little time to infuse. They will tint your recipe similar of the petals them selves, if you want a striking pink you can use Japanese rose Rosa rugosa or other strongly coloured roses from your garden.

This is a two part goodie! Because with these recipes you get two products-

  • A Rose infused condiment, alcohol or syrup.
  • Petals that have been pickled, or syrup and alcohol soaked which are delicious. 

Simple recipe for Rose flower vinegar

Melt together with heat on the hop 400ml of your choice of vinegar and 2 heaped tablespoons of brown sugar ( or an amount to your taste) Once cooled, pour into a clean jar that has been stuffed full of rose petals. Fill almost to the top, as vinegar can degrade most jar lids. Leave for 5 days then decant the vinegar into a suitable bottle and keep the rose petals in a jar in the fridge ready to use on dessert, salads or especially with Turkish and moroccan like dishes.  

Jams and desserts

The petals work great in jam or sweet pickles also for sorbet, ice cream and jelly. Another way to use them is to incorporate them in no-bake slices like tiffin. 

Tea 

Petals can be dried and made into blends of loose leaf tea.

Other Rose recipes


Rose hips

A unique flavour of a sweet tangy tomato/strawberry.

There’s a little way you can get a taste of Rose hips before collecting 100’s of them. Once they are soft ( pull off the shrub easily) there will be a little hole where it was just attached to the stem. Give the hip a very gentle and even squeeze so the pulp oozes out like toothpaste from the hole, and try! if the seeds also push out you’ve pushed too hard and if lots of juice comes out its fermenting, in both cases toss it and get another.

Rose hip syrup

This is honestly just lovely, It is simply Rose hip pulp and sugar. There are a few ways you can make this depending on if you want to do less work and how quickly you want result. For all methods it’s best to have your rose hips already soft either by collecting after the frost or having stuck them in and out the freezing a couple of times.

The reason to have them soft first is so they are sweeter, need minimal processing which preserves more vitamin C and to get the more of the delicious pulp.

For method one 1 and 2 first you need the pulp…..

Place your whole washed soft rose hips into a pan. If a few have bits of stalk on it’s no problem. Add enough water to cover and simmer on a medium heat until they are soft enough to mash into a pulp.  

Now you sieve the pulp, theres two different ways depending if you want a thicker puree or a flavoured liquid/jelly- but the most important thing is you use a cheesecloth or jelly bag, it has to be a tightly woven mesh to stop the irritating little hairs inside coming through so a regular metal sieve or will not do.

Method 1- Best for puree, pickle, sauces, jam, thicker syrup.

Roll up your sleeves and with your cheesecloth squeeze the pulp through the mesh, it takes a little work but worth it for the rich thick result.

I usually do a double squeeze. Once I can’t get any more puree through, I put it back in the pan and add more water and squeeze through again or go to method 2. It’s amazing how much more you get, the second lot is thinner but still great for syrups!

Method 2- Best for cordial, drinks, jellies and a thinner syrup.

You may want to water down your pulp a little more first then leave it hanging in a jelly bag overnight this will result in a translucent flavoured liquid.

Now you just need to add sugar, Demerara is considered the tastiest by most people but any is fine. You can add an amount of sugar to your personal taste but if it’s under 50- 60% sugar it will have a shorter shelf life as it wont naturally preserve, you will need to refrigerate, freeze or use jam/pickling heat methods for longer storage. 

Method 3

With your cleaned and dried soft rose hips, get a clean jar and layer 50-50 of rose hips and sugar ( demerara is best)  in a lasagna like way, then pop the lid on and leave in a temperate place out of the sun, in 1-3 months a syrup will have formed all by itself. Because sugar is hydrophilic ( loves moisture) it draws the juices from the rose hips out and forms a syrup. It’s ready once all the sugar has liquified, though I often leave it an extra couple of weeks after to make sure all the flavour is infused. Before serving if any of the rose hips are broken you will need to sieve the syrup through a cheesecloth or jelly bag to make sure the seeds and hairs are left behind.


Extra tips…

If you’re worried some hairs have made it through into your syrup, leave it standing overnight and they mostly float to the top so you can just scoop them out.

It is possible to put them through a low power food processor briefly before heating to help break them up. I’ve done this and still successfully sieved the hairs and seeds out. But it must be a light chop up not liquefying something like a Nutribullet is way too powerful. 


Medicinal Uses and nutrition

Rose petals

Drinking Rose petal tea is an important part of Traditional Chinese medicine.

It’s a good source of vitamin A,C and E, also iron and calcium while containing zero fat, sugar, calories or protein.  

The petals have mood stabilising and lifting properties. The smell of roses also promotes a calming and stress relieving effect. 

The vitamins and antioxidants in Rose petals support skin health giving them them the strong association with beauty, many skin care products contain rose.

Rose hips 

Most well known and praised for their incredible anti inflammatory properties and high Vitamin C content which is 8-20 times that of oranges with 426mg in 100g of rose hips. 

Rose hips are also high in folate and contains vitamins A, B3, D and E along with flavonoids, carotenoids, betasitosterol, fructose, malic acid, tannins, magnesium, zinc, copper and numerous other phytochemicals.

Heart health

Consuming rose hips may boost heart health by lowering cholesterol and blood pressure.  In a 6-week study in 31 people, drinking a rosehip beverage containing 40 grams of rosehip powder daily led to significant reductions in blood pressure, total cholesterol, and LDL (bad) cholesterol, compared with the control group.

Benefits for arthritis

Rose hips have been well studied for their effects on osteoarthritis pain. A recent review of 24 studies found that supplementing with rose hips may help relieve osteoarthritis symptoms by combating oxidative stress and inflammation in your joints. Additionally, a review of three studies noted that people taking rosehip powder were twice as likely to report improvements in osteoarthritis pain. Finally, a recent review observed that rose hips reduced pain and stiffness in those with osteoarthritis.

Skin 

Rose hip oil is now a popular anti-aging substance in the beauty industry, it’s made by cold pressing rose hips and extracting their natural oils. The seeds are high in polyunsaturated fats, which supports healthy skin and protects it from damaging compounds, such as ultraviolet (UV) rays, cigarette smoke, and pollution.

In one small, 8-week study, taking 3 mg of Rose hip powder daily led to a significant decrease in skin wrinkles and significant increase in skin moisture content and elasticity.

Researchers attributed these results to rose hips’ robust antioxidant, vitamin C, and fatty acid profile, which all protect and replenish your skin barrier.

Rose hip oil may also aid wound healing. In a recent study, rats treated with this oil had significantly faster wound healing and less scar development than the control group.

Across the UK, there’s something to find in every season, whether it’s the zingy green shoots of spring, juicy summer berries, or earthy autumn mushrooms. This guide takes you through the year, month by month, showing you what to look for, where to find it, and how to enjoy it safely and sustainably.

Foraging in January

Christmas is over, you’ve already broken your new year’s resolution and the weather’s foul but believe it or not there’s still plenty to be foraging in January. Make the most of those brief breaks in the rain and burn off some of that Christmas dinner.


Oyster Mushrooms 

A mushroom that’s common and can be found all year around. It is dead easy to ID and usually grows in large, overlapping clusters. You’ll find them growing on dead or decaying broad leaved trees and stumps and they are a great meat substitute.

Three-cornered leek

One of the first plants to emerge and to look out for, it’s a non-native invasive species that can be used as a substitute for spring onions. The leaves have 3 sides hence the common name and it is normally found in damp environments at the sides of ponds and rivers.

Dandelion root

Winter is the best time to harvest the roots of Dandelion, the plant uses the root to store carbohydrates over winter. As long as the ground isn’t frozen solid they are pretty easy to remove but remember to seek the landowners permission beforehand.

Spruce needles

Yes you can eat your Christmas tree but the flavour comes from volatile oils that have most likely evaporated by now so go out into the wild and harvest some fresh ones. Conifers are an underused resource that are available all year round and safe once you can identify a Yew tree.

Bittercress

Bitter cress, growing in winter-forager James

A tiny plant that packs a punch, you’ll find them everywhere including your back garden. Use it as you would rocket or watercress for a spicy, mustardy kick.

Foraging in February

When we’re Foraging in February the weather tends to still be cold and there’s still the risk of snow and frost but on the odd days when the sun does shine it gives me hope that spring is just around the corner.

Scarlet elf cups

A lovely late winter mushroom that’s easy to ID, something we often find when foraging in February their only lookalike is the Ruby Elf cup that’s also edible. They get their common name as they were supposedly used by elfs as drinking vessels and I like to follow this tradition by filling them with birch sap. They hold their bright red colour throughout cooking so are great for brightening up dishes. Look for them growing on damp, decaying hardwoods, if you find a good patch they can appear in their hundreds.

Chickweed

A plant that’s available most of the year but perhaps at its best in late winter/early spring.  It can be eaten raw or cooked and has a mild lettuce type flavour. Most people will have chickweed growing in their gardens so rather than composting it, use it for its cleansing and healing properties and it’s also packed full of vitamins and minerals. The key feature to look for is the ‘mohican’ of fine hairs running down the stems which distinguishes it from any lookalikes.

Nettles

Again a plant that’s available most of the year but at its best now. The leaves are packed full of iron and Vitamin A and D use them as a spinach alternative or to make a tea which is an amazing winter tonic.

Wild garlic

The first shoots of wild garlic normally appear in February, it’s a plant that seems to get more and more popular each year. The strong scent is a key feature, you can normally smell it before seeing it. Look for it in ancient woodlands, river banks and hedgerows, but remember to leave the bulbs in the ground and only take what you need.

Lesser Celandine

A plant that’s not really used much now but one that would have been vitally important to our ancestors as the cooked roots  were an important source of carbohydrates. These knobby tubers are said to resemble piles, and according to the doctrine of signatures this resemblance suggests that it could be used to cure piles. It is often known as Pilewort. The flowers which emerge towards the end of the month are seen as one of the harbingers of spring.

Foraging in March

We’re Foraging in March, the weather is slowly warming up and flowers are starting to bloom but the weather can vary across the country and further north there’s still a risk of snow. The Anglo-Saxon name for the month was Hlyd monath meaning stormy month. If the weather is terrible take some solace in this old saying ‘March winds and April showers, bring forth May flowers.’

Birch sap

One of my all time favourite wild ingredients, that’s only available for a short window(typically the last 2 weeks of March into April) Birch trees store their energy in the form of sap over winter and as the temperature rises and the tree gets ready to produce new growth the sap makes it way from the roots up to the new shoots. The sap can be drunk straight from the tree, it contains betulinic and salicylic acids and is a great tonic or you can boil the sap down and turn it into Birch Sap syrup which in my opinion is even better than Maple syrup. Gorse

A common plant/shrub that you typically find on coastal cliffs and moors, it can flower at any time of the year. When there’s not much other colour around these flowers are great added to salads and desserts and have a mild pea flavour. Just watch out for the long, sharp thorns!

Hawthorn leaves

The leaves of Hawthorn are at their best in March before they’ve toughened up and become bitter. Add them to salads or gently wilt them like spinach. Traditionally the leaves and young buds were known as bread and cheese, they don’t really taste of either they have more of a mild nutty flavour.

Cleavers

Sticky weed, sticky willy, goosegrass or cleavers is a plant with lots of common names and one that most people are familiar with. It’s related to coffee and the seeds later in the year do make a good coffee alternative but March is a good time to gather the young shoots before they’ve developed their ‘sticky’ hairs. It can be eaten raw or gently steamed and has a mild cucumber flavour.

Glistening Inkcap

A fairly common species that gets its name from the fine ‘mica’ coating on the caps, this coating gives it a ‘glittery’ appearance. They can look very similar to the Common Inkcap which is toxic so only harvest specimens where the coating is obvious. They can be cooked but tend to disappear to nothing. I salt them and use them as a squid ink replacement to make risotto and pasta dishes.

Foraging in April

Foraging in April, it’s one of my favourite months to forage, the warming temperatures make everything burst to life. It’s the month for fresh spring greens and herbs but there are also a few gourmet mushrooms too.

St. George’s Mushroom

One of my favourite mushrooms and they come at a great time when my dried mushrooms collected in Autumn are starting to get low. It gets its common name as it typically appears 2 weeks either side of St. George’s day which is the 23rd of the month.

They typically appear in grasslands and woodland edges, growing in fairy rings. They have a strong mealy aroma which is a key feature that distinguishes them from any lookalikes.

Lime

Depending on where you are in the country, there are a few different uses for Lime this month, up in the North where it is a bit colder the leaves are perfect right now.  They have a lovely citrus taste and are an amazing addition to a salad.

Further south the leaves may be past their best and you may find the tree in flower. The flowers have a lovely honey-like aroma and are most often used to make Linden tea.

Alexanders

The first flower buds are normally available from late March through April. My favourite  way to use them is to tempura them and serve them with a spicy relish. Alexanders are fairly common in coastal areas but they were cultivated in the past so they appear inland too.

Bistort

An underused plant in modern times, it prefers damp, shady environments and is fairly distinctive. All parts of the plant are edible but April is the best time to gather the young, tender leaves.

Bramble shoots

Brambles or blackberries are a bit of a gateway drug to foraging. They are one of the few plants people still commonly gather from the wild and most of us spent our childhoods gathering them but did you know the young tender stems can be used as an asparagus alternative? You need to catch them while they are still young and before the thorns have developed.

Foraging in May

Mayday traditionally marks the beginning of summer and May can often be one of the warmest and driest months of the year, foraging in May can be fruitful. Spring greens are still out in force and the warmer weather means the next wave of edibles is just beginning.

Hawthorn

In May the hawthorn bushes are in full bloom. Their flowers are a signature of May and their thorny branches feature in May Day traditions all over the UK. The flowers have an amazing almondy flavour and are great added to salads, used in deserts or infused in alcohol.

Fairy ring champignons

A lovely late spring, early summer time mushroom, They get their common name as they grow in rings. The rings can vary greatly in size depending on the age of the parent mycelium.

The mushrooms contain high levels of sugar called trehalose, which prevents cell damage when the mushrooms become extremely dry. So even if the weather does get hot they still tend to be in a good condition.

Ox-eye daisy

I think this is one of the best tasting flowering plants, the flowers and leaves are both edible and delicious.

I pickle the unopened flower buds and use them as a caper alternative.

When the flower buds have fully opened they are lovely dipped in a tempura batter and deep fried or they can be simply tossed through a fresh salad.

The young leaves have a strong herbal flavour when raw and I add them finely chopped to salads; they can also be cooked in a similar way to spinach.

Irish sea moss or Carrageen

Carrageen is an increasingly popular seaweed due to its immune boosting properties, it can be found along most of the British coastline and it’s easy to ID. It’s a seaweed that most of us will have eaten perhaps unknowingly as it’s used a lot as a vegan thickener or stabiliser and appears in vegan milks, toothpaste and beers.

Ladies Smock

A common member of the Cabbage family is at its best in spring. The flowers and leaves have a spicy, horseradish type flavour  that works well in a variety of dishes. Normally found in meadows, where it gets established it can become hyper abundant.

Foraging in June

Foraging in June can be really variable weather-wise, one day it’s hot and humid and the next day it’s damp and miserable. The summer solstice is towards the end of the month when the sun reaches its highest point, it’s an important time in the foraging calendar.


Elderflower

Grab them while you can! The season can be short for elderflowers but they dry really well or you can preserve them in a variety of different ways. Elder is a common and easy to ID tree/shrub that many people have growing in their gardens.

Marsh Samphire

Becoming quite trendy over the last few years, it’s an easy and common plant in estuaries and tidal bays. It can be eaten raw or cooked and has an incredible salty flavour.

Rose

Rose bushes up and down the land fill with blooms at this time of the year. It’s a plant most people are already familiar with and the flowers of all roses are edible. If you’re a fan of Turkish delight you’re in for a treat. They’re nice added to salads or use them to flavour sugar and syrups.

Pineapple Weed

A non-native plant that’s closely related to Chamomile. All parts of the plant have a strong pineapple scent and flavour that’s great in desserts and salads.

Chicken of the Wood

If it’s been a warm year Chicken of the Woods often starts to appear in June, it’s one of the easiest mushrooms to ID and is amazing as a meat substitute.

Foraging in July

July is typically the warmest month of the year, the hot weather can make finding fresh greens more difficult as plants focus their energy into producing flowers and fruits. Depending on weather conditions there are a few gourmet mushrooms around too.


Wild Strawberry

A plant that’s almost impossible to go wrong with. Look in woodlands for low lying plants with 3 lobed leaves and miniature strawberries. The wild version tends to have smaller fruits but the flavour is a lot more intense than commercially grown varieties.

Dryad’s Saddle

A very beginner friendly mushroom that you’ll find them growing on dead or diseased hardwoods. When young and fresh they taste like watermelon and become more mushroomy as they age. Dryads are woodland fairies that supposedly ride these fungi and they look a bit like an old tractor seat.

Chanterelle

One of the world’s most famous wild mushrooms, they are a lot more common in the UK than most people think. They prefer damp, shady woodlands and have a delicious apricot scent when freshly picked. Use them fresh or dried, they are also an interesting ingredient to infuse in alcohol.

Bilberry 

One of my favourite wild berries, think of them as our native Blueberry. Typically they are found on acidic soil at altitude growing in among the heathers. As well as being delicious they are packed full of antioxidants and vitamins.

Meadowsweet

A  plant that you can find most of the year but summer is when the flowers which are my favourite part are available. They have a lovely mown hay/almond flavour that works well in pannacotta, jams, wines and cordials. The plant was important in the development of Aspirin as it contains high levels of salicylic acid.

Foraging in August

Traditionally the first of August marks Lammas day which signals the start of the harvest season which is perfect for foraging in August. The Anglo-Saxon name for August was Vueod-Monath which means weed month, as this is the time when they grow most abundantly, making it a particularly good month for foraging, gathering and preserving.


Hazelnuts

A common tree in the UK, that’s loved by foragers and squirrels alike. The nuts have to be picked slightly unripe as they will be taken by the local squirrels over wise. They can be used ‘green’ or left in a dark place for a couple of weeks to ripen.

Blackberry

A very beginner friendly plant that most of us are familiar with. Packed full of vitamins and minerals they really are a ‘superfood’. Folklore says that blackberries should not be picked after Old Michaelmas Day (11 October) as the devil has made them unfit to eat by spitting or fouling on them, so get them while they’re still good.

Apple

Apple, ripe and ready to pick-

Again very beginner friendly, if it looks like an apple it’s an apple, although whether it’s one that’s sweet enough to eat straight from the tree is down to your personal taste buds. The true crab apple is getting harder to find, most you’ll come across in the wild are technically feral having grown from the discarded cores of cultivated varieties.

Porcini 

Cep, cep or porcini in situ-

One of my favourite wild mushrooms, they tend to start fruiting in August. As well as being one of the tastiest it’s also one of the easiest to ID. Unlike many wild mushrooms they can be eaten raw or cooked and the flavour becomes even more intense when they are dried.

Sea Purslane

A lovely and common coastal plant, it’s available most of the year but in August the flowers and seeds are at their best. Add them to Asian style soups and stews for an amazing salty/umami pop of flavour. Normally found on mudflats and estuaries, there’s very little that you could confuse it with.

Foraging in September

Foraging in September is brilliant, September marks the end of summer and the beginning of autumn, it’s the month for berries, nuts and seeds. The wetter weather also marks the beginning of ‘mushroom season’ and you’ll see fungi springing up almost everywhere you look.

When we’re foraging in September I find there’s quite a few in between ingredients, they’re not quite in one stage but not quite in another, lucky for us hawthorn berries have ripened up and are ready for eating – this is towards the end of September though.

An underused berry in my opinion, they are flavoursome and packed full of goodness. Lots of guidebooks recommend waiting until after the first frost but I tend to pick them as soon as they are ripe and freeze them for a couple of days to increase their sweetness. Once defrosted they’re really versatile and can be used in sweet and savoury recipes.

Elderberries

One of the most nutritious berries that we end up foraging in September, they are high in antioxidants and vitamins that boost your immune system, reduce inflammation and protect your heart, they also taste pretty good too! Use them in pies, crumble, jellies and liquors. While you’re picking them keep your eyes open for the Jelly Ear mushroom, they’re normally at their most striking now.

Acorn

A lot of people are under the illusion that acorns are toxic when in fact they are an incredible, edible resource. They can be used to make flour and coffee alternatives or used as you would any other nut. They are high in tannic acid which needs to be ‘leached’ out first which is simple but can be a bit time consuming.

Sweet chestnut

LIke acorns are an incredible edible nut, not to be confused with Horse Chestnut or conkers that are toxic but surprisingly can be used to make soap. Sweet chestnuts are traditionally roasted on an open fire at Christmas time but they can also be used to make flour, coffee, porridge and beer.

Hedgehog fungus

These little mushrooms could be my all-time favourites, depending on the year we don’t always end up foraging in September for these and will find them later in the year, however, September is often a good bet for them.

I love their flavour and texture and they keep a lot longer than many other species. They are quite common in woodlands from September until November and are very beginner-friendly. The name comes from the ‘spines’ that cover the underside of the mushroom and are a key ID feature to look for.

Foraging in October

October is one of my favourite months to forage in, there’s fungi everywhere and it’s still mild enough for fresh greens and herbs. The weather can be really variable in October, some days it’s sunny and warm and the next day it’s an amber weather warning. The days are getting shorter and plants are getting ready for the cold months ahead.


Beech nuts

An underused nut in my opinion, they are plentiful and nutritious but can be a bit fiddly to collect and process. The nuts or ‘mast’ sometimes appear in huge quantities and can be used in a similar way as pine nuts.

Rose hips

Rose hips are highly nutritious and tasty, they are particularly high in Vitamin C and played a really important role as a herbal medicine in the past. You can read more about their health benefits here. They can be eaten raw or cooked. You just need to be careful of the seeds that are covered in irritating hairs. I’d say Dog rose gives the tastiest hips but the hips of all roses are edible.

Sloes

There can’t be many people left who haven’t tried Sloe gin, it gets more and more popular each year. Sloe can also be cooked and used in crumble and pies but to be honest they are quite tart so really gin is the best use for them. They are really easy to ID, about the only things they could be confused with would be other Prunus species but they are all edible. Sloes are distinguished by the spikes on the branches and the size of the fruit.

Bay bolete

Not as highly regarded as Porcini but in my opinion just as tasty and more common. Depending on weather conditions they can appear in huge flushes. They can look similar to other boletes but if you stick to the red or blue rule they’re a really good family to explore.

Shaggy Ink Cap

These mushrooms have quite a long season but I think that they’re most common in October.They are a general saprotrophic mushroom, feeding on dead organic material and can pop up virtually anywhere. They are pretty beginner friendly, their main lookalike is the magpie fungus.

Foraging in November

Traditionally November marked the end of the harvest season and the beginning of winter, but there’s still space to head out foraging in November. It’s really the foragers last chance to collect and preserve ingredients to last throughout the winter. In some parts of the country snow will already have fallen and it’s dark by 4pm but there’s still plenty of edibles to find.

A lovely, common and easy to ID plant, you’ll find it clinging to walls and rocky outcrops. All parts of the plant are edible and if the weather is mild don’t be surprised to find it in flower, which add a mild mustard flavour to dishes.

Wood Sorrel

When I show this plant to people on walks it tends to be one of everyone’s favourites, the small leaves pack some serious flavour. Spring and summer is when the plant puts most of its growth but it can be found nearly all year round. It’s quite delicate so I rarely cook with it, instead add it to salads, desserts or it makes a lovely gin ingredient.

Amethyst deceiver

A beautiful mushroom that can be found in huge quantities, they can be used fresh, dried or are particularly good pickled. Look for them near deciduous trees, they can be quite small and tough to spot at first but once you get your eye in you’ll hopefully find many more.

Cowberry

Very similar to cranberries and they can be used in the same way. In Scandinavia they are  called lingonberries and are stewed and served as an accompaniment to roast meats and meatballs. Look for them on mountain sides and more, quite often I find them growing alongside Bilberry. The berries can be eaten raw or cooked but avoid the leaves as they are mildly toxic.

Winter chanterelle

These little mushrooms can sometimes be found in huge numbers in November. They are mycorrhizal with broad leaved and conifer trees and I normally find them where the ground is damp and mossy. They can be used in a variety of recipes and have a deep earthy flavour.

Foraging in December

We’re all getting ready for the Christmas festivities but there’s still some space to get out foraging in December. This month also features the Winter Solstice which celebrates the shortest day and the longest night of the year. There may be less to forage but there are a few species that prefer these colder temperatures. 


Turkey tail

A mushroom that can be found most of the year, they start growing in Autumn so by December they’re at their largest and best. They have quite a tough, leathery texture so they are typically not eaten as such, use them to make flavoursome and nutritious stocks and teas. They contain many compounds that boost your immune system.

Velvet shank

A lovely edible mushroom that thrives in the cold weather, they are common on decaying hardwoods throughout winter. They are cultivated in Japan and are known as the Enoki, due to growing conditions these look quite different than their wild counterparts.

Wood avens

Winter is a good time for collecting edible roots, (as long as the ground isn’t frozen solid) The roots of wood avens contain the same chemical that is found in cloves and the plant is often known by the name Clove root. I use them to make a syrup that I add to mince pies, apple crumbles and cakes.

Garlic Mustard

Garlic mustard or Jack-by-the-hedge is a plant that survives even the toughest winter. As the name suggests it tastes somewhere between garlic and mustard and works really well in winter salads. It can also be wilted and used as a leafy green.

Pine Needles

Pine needles can be collected at any time of the year but while I’m out collecting foliage for Christmas wreaths and displays I grab a few handfuls for their medicinal qualities. They are very high in vitamin C and are good for fighting infections, coughs and sore throats as well as combating fatigue. Just leave a small handful in boiling water for 5 minutes and drink it as a tea.

  3. Stay away from roadside plants – they’re often full of car exhaust nasties
  4. Choose healthy plants without any white spots under the leaves

Here’s a fun trick I learned from an old herbalist: brave souls can actually pinch leaves from top to bottom without gloves! The stinging hairs point downward, so if you’re precise (and maybe a little adventurous), you can harvest bare-handed. I’m still yet to actually master this and I’m starting to think that people who say they do are just lying to me.

Air drying: Bundle those stems together (I use twine), and hang them upside down somewhere airy but out of direct sun. Give them 1-2 weeks until they’re crispy-dry. My laundry room has become quite the herb-drying paradise!

Dehydrator method: Layer rinsed leaves on your drying racks, set the temperature between 35-46°C, and wait about 8-12 hours. The house smells amazing during this process!

Store your dried treasure in airtight containers away from light and heat. They’ll keep their hair-loving properties for 6 months at room temperature, or treat them to a vacation in your freezer for up to a year.

Let me share something wonderful with you about Herbal Medicine (that’s our special name for gathering wild plants and mushrooms). While it brings incredible joy and satisfaction, we must approach it with proper respect and knowledge. Take wild spinach / Sea Beet, for example – it packs more nutrients than anything you’ll find in your garden. But here’s the crucial bit – some wild plants can be deadly poisonous, like hemlock water dropwort (which you wouldn’t want in a tincture) so proper identification becomes our greatest ally.

Together, we’ll explore nature’s calendar of healing treasures – from the tender spring shoots pushing through melting snow to the rich bark we gather in winter’s quiet moments. In the wild we’ll discover over 100 remarkable plants and learn their wonderful healing secrets.


Planning Your Medicinal Hunt

Oh, how exciting it is to plan your first foraging for herbalism adventure! Let me share my favourite tips to help you make the most of nature’s medicine cabinet.

After years of foraging, I’ve learned that success comes from understanding nature’s rhythms and being well-prepared.


Choosing the right season

Mother Nature has perfect timing for everything! Late February brings the most wonderful awakening – that’s when our foraging season begins (although there’s still a handful of things to find through winter). You’ll spot young, tender plants like wild garlic, nettles, and dandelions bursting with healing goodness.

Summer is absolutely magical – just wait until you see those meadows painted with healing flowers from June through August! Here’s a lovely tip I’ve learned: head out around noon when the plants are simply buzzing with their strongest medicinal properties.

Come autumn, the plants share another precious gift. They pour all their energy into their roots, making it the perfect time for root harvesting. It’s also when I love gathering seeds and nuts – but remember to finish before Jack Frost arrives!


Research and preparation

Let me share my essential toolkit with you:

  • My trusty linen bags (they keep plants fresh and happy)
  • A beautiful gathering basket
  • Sharp secateurs for gentle cutting
  • Proper digging tools for root collection

Now, here’s something really important – we must respect the rules that protect our precious wild spaces. The Wildlife and Countryside Act 1981 and the Theft Act 1978 guide our foraging in England and Wales. Some special places need extra care:

  • National Nature Reserves (NNR)
  • Sites of Special Scientific Importance (SSSI)
  • Areas with local bylaws

I always follow the delightful ‘4 F rule’ – flowers, fungi, fruit, and foliage are our treasures to gather from accessible areas. But here’s my golden rule: never take more than 30% from any spot – we want these precious plants to thrive!

Safety first, dear friends! Always let someone know where you’re heading. And do dress properly for the weather and terrain – those pesky ticks won’t stand a chance!

I never leave home without my trusted field guides. Cross-checking different sources has saved me from many mix-ups. My smartphone’s brilliant for capturing photos of my finds and marking special spots.

Choose your foraging spots wisely – stay well away from busy roads, farm chemicals, and industrial areas. I always check how many plants are growing in an area. The abundant ones make much better foraging choices than their rarer cousins.

Do check your local council’s rules before setting out. Most importantly, let’s be gentle with our green friends – they’re precious gifts from nature that we must protect.


Spring Medicinal Plants

Spring is my absolute favourite time for Foraging Medicinal Plants! Picture this: tender green shoots pushing through the soil, offering nature’s finest medicines packed with vitamins and goodness. After winter’s quiet slumber, our bodies simply yearn for these fresh spring greens and wonderfully bitter teas.


Common spring medicinal plants and their uses

The wise healers of old knew something special about spring – they called it the season of Air, with its lovely warm and moist qualities. These early plants are brilliant at boosting our immune systems and helping our bodies clear out winter’s cobwebs.


Stinging Nettle (Urtica dioica)

Oh, what a marvel this plant is! I remember my grandmother teaching me about nettles – they’re proper spring tonics that get everything moving, from your kidneys to your blood circulation. Did you know that even Hippocrates himself swore by spring nettles? They’re particularly brilliant when you’re feeling worn out or a bit foggy-headed during those tricky seasonal changes.


Dandelion (Taraxacum officinale)

Don’t let anyone tell you these sunny flowers are just weeds! They’re absolute champions for supporting digestion and lifting spirits. The roots make a smashing spring tonic, and you can eat every bit of the plant – I love using the roots as coffee and tossing young leaves into my salads.


Wild Violet (Viola spp):

These sweet little flowers have quite the history! They’re brilliant at cooling and moistening, especially when your lymphatic system needs a gentle nudge. The leaves are absolutely marvellous for skin troubles, those pesky insect bites, and even varicose veins. Plus, they’re packed with vitamin C and help calm inflammation.


Chickweed:

Here’s a proper nutritious powerhouse! It’s simply bursting with vitamins and minerals, gently cleansing your blood while sorting out inflammation. I’ve seen it work wonders for skin problems and breathing troubles.


Garlic Mustard

This clever plant is nature’s antiseptic – brilliant for healing ulcers. When you taste it, you’ll notice lovely hints of rosemary, sage, mint, and thyme all mixed together.


Burdock:

A proper blood cleanser, this one. Splendid for sorting out stubborn constipation.


These spring greens often taste bitter and tangy – that’s how you know they’re giving your liver a proper spring clean. Here’s how I love preparing them:

  1. Fresh Preparations:
    • Pop them in soups
    • Whizz up a wild pesto
    • Jazz up your sauces
    • Create magical wild salads

Let me share my favourite beginner’s recipe: half-fill a mason jar with chopped dandelion, chickweed, nettle, and mint. Pour over boiling water and let it steep for 20 minutes. You’ll have a proper nutritious brew full of vitamins C, A, and minerals like magnesium, iron, and calcium.


Summer Foraging for Herbal Medicine

Summer brings us the most glorious display of healing herbs! The warm sunshine works its magic, concentrating all those wonderful therapeutic compounds right when we need them most.


Common summer medicinal plants and their uses

St. John’s Wort (Hypericum perforatum):

What a brilliant helper for those niggling nerve pains! Pop it on your skin, and watch it work wonders against shingles and cold sores. Mind you, if you’re taking any medicines, have a chat with your doctor first – this lovely plant can be quite eager in helping your body clear things out.


Red Clover (Trifolium pratense):

Here’s a proper friend for your liver! No wonder it’s brilliant for skin troubles. But where it really shines is sorting out those bothersome chest complaints with spasms and mucous.


Yarrow (Achillea millefolium)

The soldiers of old knew what they were about when they called this one Soldier’s Woundwort. It’s absolutely brilliant at getting your circulation going and helping you cool down naturally through a gentle sweat.


Meadowsweet:

Would you believe this lovely plant helped create aspirin? True story! Though do be careful if you’re sensitive to aspirin or have tummy troubles.


Wild Marjoram (Oregano):

Such a powerful little plant! Marvellous for fighting off microbes and fungal nasties. The oil works a treat on athlete’s foot. Fun fact: it gets extra fiery during sunny spells.


Let me share some wisdom about processing these green treasures. Fresh plants work best for nearly half our summer finds –  about half, while  a third need a bit of preparation to shine their brightest. Most herbalists swear by shade drying – it works for most of our processed herbs.

When it comes to preparation, I find infusions work beautifully, with boiling following close behind. Rather fascinating how nearly half of our summer plants can both treat and prevent ailments, while a quatre focus purely on treatment.

Now, here’s something terribly important about summer foraging – we must be proper stewards of these precious plants. My golden rule? Never take more than a third from any patch. It’s crucial for keeping our plant friends thriving, and goodness knows some helpful plants have rather dangerous look-alikes!

Timing is everything in summer foraging. I love gathering flowers when they’re being visited by bees – that’s when they’re at their peak. For leaves and milky sap, early summer mornings are simply perfect. Best wait until growth slows before snipping any stems or branches.

What I find absolutely fascinating is how these summer plants help us in so many ways.

They’re particularly clever with digestive issues and breathing trouble. Isn’t nature simply marvellous?


Autumn Medicinal Plant Collection

The autumn air brings such excitement to us foragers! This magical season, when plants draw their precious energy down into their roots, offers the perfect moment for gathering both roots and seeds. Let me share my favourite harvesting secrets to help you collect these treasures while keeping our plant friends happy and healthy.


Root harvesting basics

There’s something wonderful about that first frost – it’s nature’s signal that root-gathering time has arrived! The plants cleverly turn their starches into sugar, making roots both tastier and more medicinally potent. Mind you, we must be extra thoughtful with our biennial and perennial friends, as digging up their roots often means saying goodbye to the whole plant.

Shrubs and trees are rather clever – they grow multiple root stalks from their main trunk, so we can carefully harvest some without causing harm. I’m particularly fond of horseradish’s generous nature – if you cut the crown with a tiny bit of root and pop it back in the soil, it rewards you with a splendid regrowth rate.

Those tricky brittle roots like dandelion, burdock, and yellow dock need special handling. I’ve learned to dig well away from where they’re growing for the best results. Though sometimes a good old digging fork does the job just fine for plants that come back year after year.


Seed collection methods

Autumn gives us the loveliest window for seed gathering. Watch for that perfect moment when seed pods turn from green to brown – but be quick before they pop open! Do jot down where and when you found them – future you will be ever so grateful.

Here’s my golden rule for sustainable gathering: only take seeds from places where plants grow in abundance, and never more than a third from any spot. Oh, and always scatter some seeds back when you’re root harvesting – it’s like saying thank you to the plant.


Common autumn medicinal plants and their uses

Dandelion (Taraxacum officinale):

The autumn roots are absolute treasures for gut health – they’re packed with more inulin than spring roots.


Burdock (Arctium lappa)

These magnificent roots can stretch longer than your forearm – 12 inches or more, and thick as your thumb! Look for first-year plants without seed stalks – they’re the best. A little patience after the frost makes them sweeter and starchier.

Dock (Rumex crispus):

You’ll spot these lovely plants by their crisp, curly leaves and reddish-brown flower stalks. The roots, looking rather like golden carrots, need a proper drying before use – saves any tummy troubles later.


Here’s my tried-and-tested processing routine:

  1. Give those roots a proper scrub with water and a vegetable brush
  2. For tinctures: Fresh is best – I swear by Green’s Herbal Medicine-Makers Handbook
  3. For drying: Slice them whisper-thin and keep below 95 degrees Fahrenheit
  4. Store in a cool, dark cupboard

Now, some terribly important safety bits:

Never gather from roadsides or anywhere near chemicals.

Roots are proper sponges for soil nasties, so choosing the right spot is crucial.

Do check which plants are endangered in your area – there might be lovely alternatives you can grow yourself.

Ensure you only harvest roots on your land or on land where you have permission to do so.


Winter Medicinal Hunting

Don’t let winter’s frosty embrace fool you! Some of my most treasured medicinal finds come from this magical season.

While other plants sleep soundly under their snowy blankets, our wonderful trees and evergreens keep their healing secrets ready for those who know where to look.


Bark and evergreen medicine

The bark of trees is absolutely fascinating – packed with powerful compounds like tannins, alkaloids, and the most delightful aromatic resins. White birch bark is a proper marvel, containing betulin that scientists are studying for fighting tumours, and would you believe it – willow bark gave us the original aspirin through its salicin content! As far as I’m aware developed in Nottingham.

Here’s my favourite tip for sustainable bark collecting – look for those young coppiced stems at the base during winter or spring. If you’re working with bigger branches, just give them a gentle pruning without bothering the main trunk. Mind you, never take more than a third of the bark’s width round the tree – that’s absolutely crucial.

Getting your bark ready needs a bit of loving care. First off, give it a good brush to remove any uninvited guests and dirt, then trim away those little side shoots with your sharpest knife.

Usually, the whole bark is brilliant for medicine, though sometimes you’ll just want the inner bits. Pop it somewhere cool, dark, and airy until it’s properly crisp.

Oh, and let’s not forget our evergreen friends!

Their needles are absolutely packed with essential oils – marvellous for fighting off nasties and keeping our breathing clear.

Pine needles are particularly special – bursting with vitamin C and brilliant at calming inflammation.

Do be careful when gathering evergreens though, loves. That nasty yew can catch you out. We have a guide right here to help you distinguish Yew from other evergreens.

Here’s how I love preparing these winter treasures:

  • For sniffles and coughs: Whip up a lovely steam bath or soothing chest rub
  • For immune support: Brew vitamin C-rich teas – plenty in Pine Needle
  • For those achy bits: Try my special willow bark tea – 1-2 teaspoons steeped for 10 minutes does the trick
  • For natural antiseptics: Let bark infuse in your favourite carrier oil for 4-6 weeks

With a keen eye and gentle hands, winter’s green allies can keep our medicine chest full all year round.

Oh, how I love a good tincture! They’re proper stalwarts in a herbal cabinet, keeping their healing powers practically forever when made with alcohol. Here’s a crucial tip – make sure your final mixture has at least 25% alcohol. Not keen on alcohol? No worries! Glycerin makes a splendid alternative, keeping your medicine fresh for 3-5 years without needing the fridge.


2. Herbal Infused Oils

These gentle darlings are absolute treasures for skin troubles. I spend many happy hours watching my herbs dance in lovely carrier oils like olive or sweet almond, sharing their healing gifts. The magic happens when the oil creates a protective cuddle around your skin, helping all those wonderful nutrients sink right in.


3. Herbal Syrups

Now here’s something that brings joy to medicine-taking! Syrups are brilliant at making herbs taste delightful, especially when alcohol might be a bit too sharp. I love playing with different sweeteners – honey, maple syrup, or plain old sugar all work beautifully.


Keep these precious remedies happy with proper storage:

  • Pop them in dark glass bottles away from light and heat
  • Find them a cool, dry home
  • Give them regular check-ups for freshness
  • Always label with dates and ingredients (trust me on this one!)

The Daisy family, scientifically known as Asteraceae, is the largest family of flowering plants in the world having over 32,000 species! It comprises mostly herbaceous plants especially in the UK, and makes up a huge portion of our most showy and valued flowers. Asteraceae is so large it’s incredibly varied, and the only shared characteristic within the family are the flowers which we will explore in more detail.

Uses and edibility

Loved by herbalists for its plethora of medicinal properties from plants like Echinacea, Arnica, Milk thistle and Chamomile to name a few. Some of our food crops come from the Daisy family like lettuce, sunflowers and artichokes. For the forager it’s a real mixture, there’s some wonderful edibles but unfortunately some poisonous ones too. There are no golden rules to pick out the edibles unfortunately like there are in some other families. However you can, from the flowers at least narrow it down to the Asteraceae family which is a huge win!

How to Identify the Daisies

Aster as in Asteraceae means star, named for the shape of the flowers. The majority of the flowers in this family have what’s called disk inflorescence or compound (composed of two or more) flower heads. 

A flower as we know generally means the seed bearing part of the plant containing the reproductive organs, but in different species of plants there may be one individual seed producing structure then surrounded by petals or if in the daisy family, multiple or even 100s together forming a central disk surrounded by petals ( known as ray florets).

An excellent example of this magnified is a sunflower, which I’m sure you will have noticed is a central disk of many seeds.

The vast majority of daisy family flowers have numerous petals, for any flowers with 8-30 plus petals I would start my inquiry in this family first.

However there are a few exceptions like Yarrow with 5 and Pineapple Weed with none.

Amanita Muscaria, or the Fly Agaric, the iconic and quintessential mushroom (or toadstool) of European folklore, is one steeped in much myth and legend, both urban and otherwise. Some (mostly mis-informed) people have been brought up with the belief that it is deadly poisonous, others believe it to be the Soma, the sacrament of the Gods, of the Indo-European Aryans and later the Hindus and the Ancient Greeks. This is a fungus that is embedded in human culture and symbolises many things to many people.

Other common myths about this mushroom exist: did the Viking bezerkers truly partake in the fungal fruiting body in order to fuel their animalistic raping and pillaging of hapless Celts, Anglos, Saxons, Slavs etc. on their conquests across Europe? Did, as urban legend suggests, the mushroom inspire the myth of Santa Claus, with his red coat, flying reindeer and magic ability to descend down chimneys and leave gifts for good girls and boys, or coal for the naughty ones?

As it is approaching Christmas, I will be focusing here on the Santa Claus myth, an analysis of Viking bezerkers can wait for the New Year.

To those unfamiliar with the association between a “poisonous” red toadstool and Ol’ Saint Nick, I will outline the myth first.

I have seen the repeated claim, in conversation, online and in literature, that the Fly Agaric mushroom has inspired the modern day representation of Santa Claus/Father Christmas. The claim is repeated with the following evidence:

Sami herdsmen, whose range of territory spans much of the North Pole, including parts of Finland and Russia, apparently have a tradition of shamanic use of this mushroom. Reindeer favour the red-capped fruiting bodies as an autumn snack, and have been observed to eat these mushrooms and fall prone to excitatory behaviour, jumping up and down, “prancing”, generally becoming more animated. Herdsmen observed this, and wanted to experience the effects of the mushrooms themselves. Over time, they learnt that drinking the urine of a reindeer that had ingested the mushroom, avoiding nausea and other unpleasant side effects associated with eating it raw. It is also rumoured that shaman with strong enough constitutions would eat the mushroom first, dispensing their urine with the now-metabolised Muscimol to their companions to drink.

The mushrooms were sometimes dried, strung up and used to decorate fireplaces and Christmas trees over Yule (before Christmas was even known as Christmas, given that Christ has to be born in order to give his name to the festivity), given they are usually found in October/November, December ends up as the prime time of year to display these charming dried caps as decoration.

These purported cultural uses for the mushroom are said to then combine to influence the myth of Santa Claus. The flying reindeer are inspired by the jumping, muscimol-drunk reindeer observed by the Sami. Santa Claus coming down the chimney to leave gifts is influenced by the practice of decorating fireplaces with dried Amanita caps, as well as the flying and descending of the Shaman through the open roof of his yurt. The red and white coat is inspired by the vivid red and white fruiting bodies of the mushroom, perhaps also mimicked by the dress of the shamans who ingested these fungi to experience the feeling of “flight”, whilst potentially also dressed in red and white.

I read these myths and digested them without further critical thought. What fun, that another iconic piece of Christmas iconography can be traced back to some kooky European tradition of drinking reindeer piss to receive visions of enlightenment.

Later I had another thought.

Hang on, didn’t Coca Cola give Santa his red coat in the 1950s? I thought he was supposed to be green before that?

In which case, how did the Fly Agaric influence any of this?

I found myself in a deep-dive on Christmas tradition to dissect this further. Did, as urban legend suggests, the iconic mushroom of European folklore actually influence our modern Santa? Let us examine.


St Nicholas, Father Christmas and Santa Claus

I thought examination of this subject would be easy, google some stuff about St Nick, gather evidence, present, job done. It turns out that instead, I have to first of all examine the relationship between St Nick, Father Christmas and Santa to determine where the influence of the Fly Agaric might have ingressed into our cultural consciousness.

St Nicholas of Myra, of modern Greek descent, existed during the time of the Roman empire between 270 and 343 AD. He is the direct inspiration for Sinterklaas (the Dutch name), or Santa Claus as he is now known. Nicholas’ habit of secret gift giving gave rise to the folklore of Santa Claus [Michael the Archimandrite, Life of Saint Nicholas Archived 3 July 2018 at the Wayback Machine (Chapters 16–18)]. Saint Nicholas was not known for having owned reindeer (being Greek), climbing down chimneys, or wearing a red coat. The myths associated with him, although interesting stories, do not draw a link to Sami shamanism (although the Fly Agaric can be found in Greece too). We will discard the original St Nick as a possible option for inspiration-by-mushroom when it comes to folklore.

The Christian stories of St Nicholas then spread, along with other Christian stories, throughout Europe. Sinterklaas, based on St Nicholas, arose in the Netherlands and Belgium. As Dutch settlers made their way over to the New World (America), the name was carried over, and slowly evolved into the man we know now, Santa Claus. The name Santa became more common around the 18th century in America specifically [“Last Monday, the anniversary of St. Nicholas, otherwise called Santa Claus, was celebrated at Protestant Hall, at Mr. Waldron’s; where a great number of sons of the ancient saint the Sons of Saint Nicholas celebrated the day with great joy and festivity.” Rivington’s Gazette (New York City), 23 December 1773.]

Please note, I have not referred to Santa as Father Christmas during this passage. This is for good reason. Father Christmas evolved in Europe separately from St Nicholas/Santa. Father Christmas, usually dressed in green, with a wreath of holly around his head, was a personification of Christmas cheer common in Britain, far before the name Santa Claus was ever uttered by an Anglo/Saxon/Brit. It appears he was inspired by the Norse God Odin, who was celebrated at Yule (a mid-winter festivity enjoyed by Germanic tribes in Western Europe) [Baker, Margaret (2007 1962). Yule-tide celebrations and culture were later assimilated into what is known as Christmas, due to Christian tradition spreading and merging with the older pagan practices across millions of newly converted Europeans.

Odin is speculated to have influenced Father Christmas (not Santa) because of his long white beard, blue hooded cloak and practice of taking to the skies on his eight-legged steed, Sleipnir, visiting people with gifts. Later, this evolved into the green (sometimes red)-cloaked Father Christmas. Could inspiration from the mushroom lie behind the Odin myth? It is possible albeit tenuous – most summaries of the Yule myths surrounding Odin don’t mention mushrooms, without further research into source texts I am unable to validate if they feature prominently in the myths or not.

Santa Claus, having evolved separately from Father Christmas, arrived in Britain in the late 1850s. The two characters then merged over time, combining origins of the Christian myth of St Nicholas, with that of the Norse/pagan Odin. Father Santa-Christmas-claus was depicted in a number of coloured cloaks, ranging from green to red to blue to brown. As the popular story goes, the Coca Cola company portrayed Santa Claus in red in an advertising campaign in the 1930s. Before this, the Santa character had been displayed in red/white of several covers of Puck magazine, even earlier than 1930 [https://en.wikipedia.org/wiki/File:Santa1902PuckCover.jpg]. This shows that Coca Cola, contrary to the urban legend that attributes Santa’s modern appearance to them and them alone, were in fact just solidifying the already existing aesthetic of a growing cultural figure.


Our first problem

We come to our first issue with our Fly Agaric urban legend. The claim that the shamanic tradition of using Fly Agaric over winter, as both soul-medicine and as decoration, directly influenced our modern Santa/Father Christmas in terms of his style of dress, namely the red cloak.

As we have examined, both characters that combined to create our modern Mr Claus, have appeared throughout history in a manner of different colours, red has not been the only one.

Santa Claus (depicted most commonly in red, unlike Father Christmas, who more commonly wore green) is the myth that stems from St Nicholas, a Greek, Christian saint. Although the story of St Nicholas swept Europe as far as the Netherlands, it does not appear to have blended with any obvious aspect of European paganism, the most likely carrier of any tradition closely associated with ritual use of the Fly Agaric. If anything, we would expect to see this influence more heavily from the Norse God Odin, who was the root of Father Christmas. Odin however, as we have examined, was depicted in a blue cloak, riding an eight-legged flying steed, NOT a reindeer. The character of Father Christmas, before his merging with Santa, was not depicted as having flown with reindeer either.

Despite claims of numerous articles on the internet that embellish this myth with extra detail that strengthens the relationship of the Fly Agaric to the Odin myth, at the time of writing, I cannot find any firm sources to suggest this is the case. I am happy to adjust this viewpoint in the face of real evidence (i.e. evidence that is not a potential fabrication of 20th/21st century neo-folklore).

This leaves us in a difficult position, as the evidence we have shows that both sets of myth contain a jolly man in some form of cloak, but the colour of his cloak does not become ubiquitous until the early 20th century. This leaves only a very tenuous link between the colour of Santa’s dress and the red and white cap/stem of the Fly Agaric, a subtle influence may still remain somewhere, but there are far too many factors involved, far too many disparate origin stories, both cultural and geographical, to say for certain that Amanita Muscaria had any influence on the colour of Mr Claus’ red and white uniform.


Oh deer oh deer – problem number 2

Next up, we examine the reindeer. As mentioned, it is a fact that reindeer enjoy Amanita Muscaria as a stimulating snack.

It is stated in urban legend that the flying reindeer in our Christmas story are inspired by tales of deer, excited and intoxicated by a mycologically-created cocktail of ibotenic acid and muscimol, which were then used by Northern European shaman to also “fly”.

In this case, we should see the tales of flying reindeer date back to the near-origins of at least one of our proto-Santa myths, given that the ingestion of these mushrooms will have been happening for hundreds of thousands of years under the watchful eye of nomadic herders throughout a multitude of generations.

According to the sources examined, again, the St Nicholas à Sinterklaas progression shows no sign of flying reindeer, or indeed any other sort of flying herbivores. Our Germanic Odin à Father Christmas myth shows some more promise, in that it does depict a flying, eight-legged horse, but again this is a far cry from a sleigh pulled by nine reindeer. The trail again runs cold, as by the 1800s, the British Father Christmas was not depicted as being accompanied by any sort of flying animal.

It is in 1821, that an American poem “Old Santeclaus with Much Delight” [“mentioning Don Foster, Author Unknown: On the Trail of Anonymous (New York: Henry Holt, 2000: 221–75) for the attribution of Old Santeclaus to Clement Clarke Moore”. Tspace.library.utoronto.ca. Archived from the original on 18 July 2011. Retrieved 21 December 2010.], described Santa Claus on a reindeer sleigh, bringing gifts to children. The poem is anonymous, so unfortunately it is not possible to investigate the author so see where this inspiration arose from. This is likely from exposure to Northern tribes of Native Americans or Inuit, who may have provided inspiration for the sleigh to appear in this poem. There may have been folk-stories already revolving around Santa and Reindeer at this time, it is unlikely that a New York poet was the first person on the planet to think of this, but it does appear that the depiction of Santa in a sleigh, drawn by reindeer, was uncommon until this point. Moreover, the idea comes from a region that is unlikely to have much exposure to Northern European paganism or shamanic practice. Fly Agaric use appears to be far more common in European folklore than American.

Once again this leaves our urban legend in murky waters. Given the evidence, it is quite unlikely that reindeer ingesting Amanita mushrooms are responsible for the depiction of flying reindeer in our modern version of Santa Claus. From the pagan origins of Father Christmas, Odin’s flying steed does not make it into even semi-contemporary portrayals of the jolly personification of Yuletide/Christmas. From the saintly origins of Santa Claus, no flying reindeer feature in portrayals until around 1820, these originate in New York USA and cannot, without potentially a lot more sleuthing into the matter (including discovering the identity of two anonymous poets) be directly attributed to a shamanic or mycological origin.


So where does this lead us?

Having researched this matter, two pints deep on a Saturday evening, without much better to do, I can conclude, in my role as amateur historian and professional forager, that the influence of the Fly Agaric mushroom on Santa Claus/Father Christmas myth is negligible at best. The urban legend, in my opinion, is bunk, without seeing a great deal of supporting evidence to the contrary.

The legend is repeated over and over, seemingly without a chain of actual historical literature to suggest how the Santa Claus character derived his red cloak and flying reindeer from shamanic use of Amanita Muscaria. The evidence explored in this text shows instead, that our modern Santa Claus was derived from a mix of Christian and pagan mythology, without the direct influence of any mushroom. The pagan mythology, being the most likely source of influence regarding use of fungal entheogens, comes up empty, with the white-bearded Odin traditionally wearing a blue cloak and riding on a flying steed, which did not enter the later depictions of Father Christmas. Any myth that precedes Odin is murky at best in providing evidence for our Agaric myth.

The Christian myth leads us to the development of Santa Claus in 19th century America, where his cohort of Reindeer are then introduced by writers in New York. His red cloak was prone to colour change, before finally settling on the colour red due to the expanding influence of advertising and colour media in the 20th century.

Am I saying it is totally impossible that the Fly Agaric influenced the Santa myth? Of course not. I cannot say this for certain, and there is still room for evidence to the contrary. However, that evidence has not come to light in this limited investigation (using only secondary sources I could find online). Myth not entirely busted, but certainly not as plausible as expected.

How AI generates content from existing sources

Large language models combine information from online sources and published manuscripts to create AI-generated information. These systems process big amounts of data and create content. They cannot verify if facts are accurate or appropriate in context. The technology creates content that sounds believable instead of ensuring accuracy. Obviously this can become a huge issue when it comes to generating foraging related content as it’s seriously imperative that the information is as accurate as possible, the downside of such (in an extreme circumstance) could lead to someone consuming a deadly toxic species and dying.

Potential benefits of AI-created educational materials

AI technology shows promise to boost education with proper implementation, despite some concerns. AI tools streamline administrative tasks and let educators dedicate more time to hands-on instruction and student connections. Students and teachers can benefit from this technology in several ways:

  • Traditional educational approaches change with new methods
  • Teaching practises improve through tech integration
  • Students develop better critical thinking skills with AI as a support tool
  • Learning becomes more interactive and meaningful

Note that at the moment AI can help identify common species, but we stress that no one should rely on it alone to determine what’s safe to eat.

This technology works best to support rather than replace traditional foraging education methods. I always say, even when we’re using our standard books, that we should be checking at least 3 different sources when identifying something new or that we’re unsure of. Pictures in different locations and slightly different habitat can lead to things looking slightly different. Also one persons description can be quite different than another, I may describe the miller as smelling of wet washing whereas someone else may describe it as freshly milled flour, that doesn’t take in to account how it may actually smell to you compared to me.

AI’s role in foraging education needs a careful balance between state-of-the-art solutions and safety protocols. These tools could create better learning experiences and simplify educational processes. Expert guidance and traditional knowledge systems remain essential partners for safe and effective foraging practises.

Risks and Limitations of AI-Generated Foraging Content

AI-generated foraging resources have sparked most important concerns among experts and seasoned foragers. Dangerous misinformation poses real threats, especially when you have mushroom foraging where precision determines survival.

Lack of expert verification and quality control

AI-generated foraging content has reliability issues. Recent studies highlight significant problems with accuracy and verification methods. The numbers paint a concerning picture. The leading plant identification app, shows only 73% accuracy in its results & Mushroom identification apps perform even worse. The best app in this category correctly identifies mushrooms only 49% of the time. I have only personally tested a few but found that Seek by Inaturalist tends to have the best results in identification. However, as mentioned earlier this should never be the whole extent of identification and only one of many steps.

Potential for dangerous misinformation

AI-generated misinformation can have devastating effects. A UK family suffered poisoning after they relied on an AI-generated field guide to identify mushrooms.

Mushroom identification presents a particularly dangerous scenario because AI systems often fail to distinguish toxic species from edible ones. Carleton University’s fungi specialist, Professor Myron Smith, calls these AI-generated guides “totally irresponsible.” He emphasises that only an experienced human eye can detect the subtle differences between edible and toxic species, However I would argue that over time these could be greatly increased among AI.

Absence of regional specificity and contextual knowledge

AI-generated guides often miss significant regional context and seasonal variations that matter for safe foraging. When I was in Italy I remember coming across something that looked very like a death cap mushroom to me and I was like ‘there’s absolutely no way we’re going near that’ However the other guide we were with said ‘I eat these all the time, I actually ate some this morning with family for breakfast’

After spending a good amount of time in different books and guides I found out it was a Amanita citrina var. alba which happens to be really common where we were specifically based.

It really highlighted the absolute key in local knowledge as if this person came to the UK without finding local information it could be very possible they’d consume a death cap by accident.

Ethical concerns around plagiarism and copyright

As with pretty much every industry there’s always going to be concerns over plagiarism when it comes to AI generated information.

AI-generated foraging content raises serious ethical issues beyond safety concerns. Recent studies show these AI guides frequently plagiarise content from authors and experts with decades-old expertise. They copy both the style and substance of respected foragers. This practise undermines these experts’ years of dedicated research.

Plenty of leading mycological societies and foraging experts have raised alarms about these AI-generated guides. Pretty much every Mycological Society I know of strongly advises against buying foraging books from unknown authors. They emphasise that accurate identification knowledge could save lives and inaccurate information could cost lives.


Evaluating the Reliability of Foraging Information Sources

Reliable sources of foraging information have become increasingly significant as digital tools and AI applications continue to expand. Botanical experts and experienced foragers stress the need for verified, trustworthy resources that ensure safe and environmentally responsible harvesting.

Key indicators of trustworthy foraging guides

Reliable foraging guides display several significant features that set them apart from potentially dangerous resources. These indicators help readers identify trustworthy information:

  • Detailed botanical descriptions with scientific names
  • Clear photographs that show multiple growth stages
  • Specific habitat information and seasonal variations
  • Detailed safety warnings and look-alike species
  • First hand information and experience (in our Mushroom Foraging guide we often have a section that’s our harvesting notes on the species, like ‘Although it can grow with any hardwood I often find it growing about 3-4 meters away from oak trees)
  • Environmentally responsible harvesting guidelines
  • References to scientific research or expert knowledge

Cross-referencing multiple reputable sources

Safety and accuracy depend on a careful verification process. We always advise that checking multiple sources reduces the risk of misidentification by a lot. We suggest you should:

  1. Consult at least three reputable guidebooks
  2. Compare descriptions across different seasons
  3. Check regional variations and specific locations
  4. Confirm identification through as many characteristics as available
  5. Take your time, once you think you have an identification leave it for 30 minutes and then come back to it and go again.

Community expertise proves it right when it comes to foraging information.

Teachers and experienced foragers could now find new ways to use AI capabilities. This approach could help us preserve the human elements of wild food collection.

Modern foraging education thrives on AI tools and hands-on instruction working together. Apps like iNaturalist (the one I tested and thought worked best, especially with fungi) have showed success by helping foragers identify plants through global user networks and determine species prevalence in specific regions. These digital resources could complement traditional learning methods instead of replacing them. AI processes plant images at remarkable speeds – up to 100,000 daily, equal to eight years of human work. This makes it a powerful tool for original identification.

Developing critical thinking skills for information evaluation

Critical thinking skills are crucial to forage safely and successfully.

Especially when it comes to Fungi there’s really a lot of different elements to take into consideration when identifying a species, it could be as simple as it growing next to a beech or birch that is the key difference between two species.

When we’re learning to forage we need to develop several critical thinking components:

  • Question assumptions and evaluate evidence
  • Analyse information from different viewpoints
  • Process complex data to make informed decisions
  • Identify risks and safety concerns (like with the information I know, this thing I have in my hand could be one of three different things, one of them is deadly toxic so I’m never going to eat this one)
  • Check multiple reliable sources against each other

Emphasising hands-on practise and sensory learning

Experiential learning is the life-blood of effective foraging education. I believe that children can start identifying plants at any age, and some show remarkable abilities as early as 18 months. I actually used to teach foraging as part of Forest School, when I led that and I was always astonished by how quickly children would pick up identification of certain species. My daughter is just 15 months and can already reliable identify blackberries – simply because she absolutely loves eating them.


What’s my Conclusion on AI in foraging?

AI’s integration into foraging practises represents a radical alteration in how people discover and identify wild foods. Modern AI tools are a great way to get support for original plant identification and learning. Studies show accuracy rates below 50% for some AI identification apps, which highlights why verified information sources and expert guidance matter so much. Technology should complement traditional foraging knowledge rather than replace it.

Learning to forage requires a balanced approach that blends advanced technology with proven expertise. Safe and eco-friendly wild food collection depends on expert-led instruction, hands-on experience, and community knowledge. Foragers have passed down traditional ecological knowledge through generations. This knowledge provides vital context and understanding that AI systems cannot match today. These foundations, improved by selected technological tools, create a reliable framework for modern foraging while preserving cultural and practical wisdom.

I think if you could have a system that analysed information and could come back to the user for more clarification and questions, with visual and the best would be video based guidance on these questions then there could be something quite spectacular there.

Imagine, you pick up a mushroom, take a video of it and submit to an identification guide. It comes back and says ‘it looks a little like XYZ, the next thing I need to help you is a video of the volva, this is found at the base of the mushroom, let me show you this video of where to find it’ Then you take a video of that and send it back. Then it asks you to take a video in a 360 degreee around you to get an idea of what plants and trees or habitat is around you.
And so on and so on.
