<\/a>\n\t\t\t<\/div><\/figure>\n\t\t<\/div>\n\r\n\r\n\r\n\r\nCherry Jam is a classic way of preserving a glut of wild cherries, it goes well in cakes and on toast, but don\u2019t feel limited by sweets \u2013 it can also go in to savoury dishes instead of sugar, for example I make a great Chinese dipping sauce with cherry jam and soy sauce.<\/p>\r\n
\r\n\r\n\r\n
Ingredients:<\/strong><\/h2>\r\n\r\n\r\n\r\n\r\n- \u00b7 A basket or carrier bag full of wild cherries (1kg)\r\n\r\n<\/li>\r\n
- \u00b7\u00a02 Cooking Apples peeled and sliced\r\n\r\n<\/li>\r\n
- \u00b7\u00a01 kg Jam Sugar\r\n\r\n<\/li>\r\n
- \u00b7\u00a0Juice of 1 Lemon\r\n\r\n<\/li>\r\n
- . 100ml water<\/li>\r\n<\/ul>\r\n

\r\n\r\n\r\nMethod:<\/strong><\/h2>\r\n\r\n\r\n\r\n1.\u00a0Take three quarters of the Cherries and put them in a large pan with 100ml boiling water, cook with the lid on for 15 minutes until soft<\/p>\r\n\r\n\r\n\r\n
2.\u00a0Whilst they\u2019re cooking using a slotted spoon or knife, remove the stones from the left over 1 quarter cherries.<\/p>\r\n\r\n\r\n\r\n
3.\u00a0Pass your softened and cooked cherries through a wide sieve to remove stones<\/p>\r\n\r\n\r\n\r\n
4.\u00a0Add the pre-cooked and sieved cherries and uncooked de-stoned cherries back to the large pan with the peeled and sliced apples, 1kg of jam sugar, lemon juice<\/p>\r\n\r\n\r\n\r\n
5.\u00a0Boil all for 10-15 mins until the jam has reached its setting point (to test put a tblsp on a small plate, put in the fridge for 2 minutes, remove and see if it has a skin over \u2013 if it does you have the setting point, if not keep cooking and repeat until you do)<\/p>\r\n\r\n\r\n\r\n
