You can marinade salmon with it, enjoy it in cocktails or have it simply spread on toast.<\/p>\n<hr \/>\n<h2><strong>Ingredients:<\/strong><\/h2>\n<p>Makes 3-4 medium jars<\/p>\n<ul>\n<li>800g young Knotweed stems chopped in to 1cm pieces<\/li>\n<li>1kg jam sugar<\/li>\n<li>1 lemon, juice and zest<\/li>\n<li>1 Thumb sized piece of ginger, skinned and finely chopped<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-43670\" src=\"https:\/\/totallywilduk.co.uk\/wp-content\/uploads\/2018\/10\/japanese-knotweed-harvest-close-up-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" \/><\/p>\n<blockquote><p><a href=\"https:\/\/totallywilduk.co.uk\/2018\/10\/24\/japanese-knotweed-fallopia-japonica\/\">Click here to see our Japanese Knotweed Foraging Guide<\/a><\/p><\/blockquote>\n<hr \/>\n<h2><strong>Method:<\/strong><\/h2>\n<ol>\n<li>Place all the ingredients in a large bowl, mix thoroughly and allow to sit, covered, for 1hour<\/li>\n<li>Place the mixture in a large pan over medium heat for 10-15minutes, until the Knotweed has softened.<\/li>\n<li>Turn the heat up to high and let it boil vigorously until the setting point has been reached.<\/li>\n<li>To test this put a small plate in the fridge and drop a small amount of boiling jam on to it (a tea spoon) \u2013 put it back in the fridge for 30 seconds then remove it and push the jam with your finger, if the top wrinkles it\u2019s at setting point.
